This is a quick weeknight meal for those of you who love to throw something on the grill! You can use large or extra large shrimp, skewer them on some wooden skewers or not.
I got this recipe from SkinnyTaste--a place where I really have some good luck finding simple meals!
Sauce:
5 T mayo
3 T Thai Sweet Chili Sauce
1 tsp Sriracha
Shrimp:
1 lb or more large shrimp, shelled and deveined
2 tsp cornstarch
1 tsp canola oil
4 T scallions, chopped
1. Combine ingredients for sauce (double it for extra sauce). Set aside.
2. Coat shrimp with cornstarch and mix well.
3. Heat a large skillet, wok, or grill on high heat- add oil (except on grill). When oil is hot, add shrimp to the pan and cook until cooked through. Remove from pan and combine with the sauce.
4. This tastes good on lettuce.
**you don't have to use oil or cornstarch....the first time I made these, I simply threw them on the grill and then brushed sauce on top immediately.
