Shrimp and Grilled Veggies


This is an easy weeknight meal taken from Skinny Taste. I love that I could eat my veggies in this bowl! You can use whatever you love or have in the fridge. Grilled corn is something that would be great in this dish.

12 oz raw shrimp, peeled and deveined
2 t olive oil
1 t onion powder
1 t garlic powder
1/2 t paprika
1 t brown sugar
sprinkle of kosher salt
fresh ground pepper
pinch cayenne pepper
zucchini
red bell pepper
corn husk
avocado
mushrooms
lime

Dry shrimp and place in a bowl. Add the olive oil and toss to coat. Add the onion powder, garlic powder, paprika, brown sugar, 1/2 t salt, pepper and cayenne. Toss again and set aside. If using an outdoor grill, skewer the shrimp on wood or metal skewers. (Soak wooden ones for at least 30 min)

Cut and season the veggies how you would like them served and grill them to your liking. Grill the shrimp. Place in bowls and serve with diced avocado and a squeeze of fresh lime juice.
