Chicken Shawarma


I follow Cooking Classy on Instagram, which is where I found this recipe. It is truly delicious!! Tender boneless, skinless chicken thigh seasoned to perfection along with some warm pita or naan and you are serving dinner right!

1/3 C olive oil, more for brushing
3 T fresh lemon juice
1 T minced garlic
1 1/2 t ground cumin
1 1/2 t paprika
1 t ground coriander (I never have this on hand, so I skip it)
1/4 t ground cinnamon
1/4 t turmeric
1 t salt
1  t ground pepper
2 lbs trimmed boneless, skinless chicken thighs

Other options for serving:
Warm pita bread or naan, cooked rice
diced tomatoes
diced cucumbers
chopped lettuce
chopped red onion
feta cheese

1. Whisk together olive oil, lemon juice, garlic, and spices in a mixing bowl.
2. Place chicken in a gallon size bag and pour the marinade over the chicken. Seal out all air.
3. Be sure marinade covers all chicken and allow to marinate 1-6 hours in fridge.
4. Preheat oven to 425. Brush a rimmed 18x13 in., preferably dark coated, baking sheet with olive oil.
5. Remove chicken from marinade and space evenly apart on baking sheet. Roast in oven about 30 to 40 minutes.
6. Remove from oven and rest 2 minutes. Slice chicken. Serve in pita or naan with rice or other desired toppings.
