Salsa Verde Chicken Bake



This is one of the most tasty, quick and easy dinners I've ever made. I was especially impressed with it considering it took little to no efforts at all. Topping with cilantro at the end is a must for cilantro lovers! This came from the website Simply Recipes and it is just that: simple. 


1 lb boneless, skinless chicken breast
1 C salsa verde, homemade or jarred
1/2 C Monterey Jack cheese
Optional fresh cilantro

1. Preheat oven to 350 degrees.
2. Cut chicken breasts in half and place in the bottom of a casserole dish so they fit tightly.
3. Pour salsa Verde on top and bake for 30-35 minutes until chicken is cooked.
4. Add cheese and bake for 10 minutes longer.
5. Remove from oven and let cool--add chopped cilantro on top and serve over rice.
