Lettuce pray. Lettuce dine. Lettuce love.


Turn that rabbit food into something delicious!





 
 

Classic Cobb Salad:
Dressing:
3/4 cup canola oil
1/4 cup extra virgin olive oil
Just less than 1/4 cup red wine vinegar
1 tbsp lemon juice
3/4 tsp powdered mustard
1 tsp Worcestershire sauce
1/4 tsp sugar
1 1/2 cloves garlic, minced

Salad:
1 head iceberg lettuce, chopped or shredded
1 head romaine lettuce, chopped
6-8 strips bacon, chopped
5-6 hard-boiled eggs, chopped
2 tomatoes, diced
3-4 grilled chicken breasts (I use Weber's garlic and herb rub), cubed
1 avocado, cut into 1/2'' cubes
cheddar cheese, cut into cubes

Make the dressing--combine all ingredients in a blender. Puree until smooth. Poor into an airtight container and refrigerate.
 

Make the salad--Arrange bacon, eggs, tomatoes, chicken, avocado & cheese on top of the greens in neat rows (or mix into a large bowl). To serve, drizzle dressing on top.

*Dressing stays good for 1 week, covered and refrigerated. I also individually place each ingredient into baggies to store in the fridge as leftovers.

This salad was awesome! And I am a salad gal. I could eat it everyday. But I have to keep some variance in my life because I am also the type of person who can't stand the same ol' drab routines. With that said, I feel so blessed to have the ability to try all these new recipes. I feel very lucky and privileged. Today I'd like to keep in mind that there are a large handful of people who don't get to have as much preference. They are fortunate to get any food. My prayers go out to them today and everyday.
