Swenson's Copycat Potato Teezers

Whoa... if you leave Northeast Ohio (like we did) and plan to never return, take this recipe with you!!!

4 C cold mashed potatoes
1/2 C all purpose flour
12 oz velveeta cheese
2 jalapenos, diced
1/2 C panko bread crumbs
Oil for deep frying


1. In a small bowl, melt velveeta cheese until just chunky. Combine with mashed potatoes and jalapenos and stir well. Add the flour, tablespoons at a time, until a thick dough forms.
2.Then use a tablespoon to measure rounded spoonfuls. Plop each spoonful into a bowl filled with panko. Cover with the panko and shape into triangles.
3. Heat oil to about 350 to 400 and drop small batches of triangles, cooking 3 minutes or until golden.
