Sweet Corn Pasta

I stumbled across a new blog that I love--Baked Bree. On her website, I found this sweet corn pasta recipe. It only took an ounce of energy to prepare! If you're looking for something simple, light, and summery, this is for you! Definitely full of simple flavors & a sweet crunch of fresh corn. I adapted the recipe a bit..so give it a try!



Sweet Corn Pasta
Adapted from Baked Bree

1 lb angel hair pasta
2 1/2 C corn kernels (4 ears of corn)
1/4 C fresh basil, chopped
1/4 C fresh parsley, chopped
1/2 C olive oil + more for tossing
2 T fresh lemon juice
2 crushed garlic cloves
1 T lemon zest
Parmesan cheese for garnish
~1/2 t garlic powder (optional)

In a bowl, combine olive oil, lemon juice, zest, basil, parsley & garlic. Toss to combine. Add corn. Toss to combine with salt and pepper. Cook angel hair pasta accordingly. Toss into corn mix adding 1-2 T olive oil and ~1/2 t garlic powder for a more garlicky taste. Garnish with freshly grated Parmesan cheese.
