Fiesta Bean Salad

If you love the taste of cumin and lime, you are in for a treat with this fresh salad! The slight crunch of the chickpeas, the protein in the black beans, and the citrus of the tomatoes pack a flavorful punch!

2 cloves garlic, minced
3 T fresh lime juice
1 T olive oil
1 t ground cumin
pinch of red pepper flakes
1/2 t salt
15 oz can black beans, rinsed and drained
1 C+ chickpeas, rinsed and drained
1 C cherry tomatoes, halved
1/4 C minced red onion, finely diced
1/4 C cilantro, chopped
1 medium avocado, diced

1. In a large bowl, combine the garlic, lime juice, oil, cumin, crushed red pepper, and salt.
2. Add the black beans, chickpeas, tomatoes, onion and cilantro; mix well. Refrigerate. When you are ready to eat, add the avocado and gently mix. Serve right away.
