I absolutely love tuna salad. It makes the best lunch and dinner! I even love eating it as a snack on those crispy pita chips you get at Whole Foods. You just eyeball this recipe based on your preferences--I don't have a recipe written down, but I always tell myself that I need to just in case someone asks for it or I forget. So here it goes....
2 large cans White Albacore Tuna (refrigerated the day before you're going to make it)
1-2 stalks of celery, diced
2 hard boiled eggs
1/2 C-3/4 C Mayo
1 tsp relish
salt and pepper, to taste
Simply mix together all ingredients!
