Low Country Boil

Yet another great recipe stolen from Baked Bree! I changed the recipe accordingly to our tastes! It was so darn easy to make! And easy is good!

Low Country Boil
Adapted from Bakedbree

3 quarts water (12 cups)
1/2 C clam juice
Less than 1/2 container Old Bay
2 lemons, halved
2 onions, quartered and peeled
2 lbs small red potatoes
1 pkg smoked kielbasa or Andouille sausage
4 ears yellow or white corn, halved
2 lbs extra large shrimp, raw
1 32-ounce can diced tomatoes


Bring water, clam juice, lemons, onions, and Old Bay to a rolling boil. Add potatoes and cook for 10-15 minutes. Add Kielbasa. Add corn. Boil for 10 minutes. Add shrimp and cook 3-4 minutes until pink. When shrimp is cooked, strain most of the liquid. Reserve just a little. Pour the boil back into pot. Stir in the diced tomatoes and their juices. Serve!
