Southwest Chicken Burgers

This recipe was fantastic! Quick and tasty. I didn't use much of the original recipe because we don't eat a lot of spicy foods, but you can make it any way you like--it's easily changeable.





Southwest Chicken Burgers
modified for the Peterson household--taken from Better Homes

1 slightly beaten egg
1/2 C tortilla chips, plain or flavored, crushed
3/4 t chili powder
1 T Cajun spice
1/4 t salt
1/4 t pepper
olive oil
Monterey Jack cheese with jalapeno or white American cheese
4-5 buns, toasted or no buns

Corn
pico de guillo
guacamole
roasted poblano
sour cream

In a medium bowl combine egg, tortilla chips, chili powder, Cajun spice, salt & pepper. Add chicken. Mix well. Shape into 4-5 thick round patties. (I rubbed a little olive oil on each side for easier handling.)

Bake at 350 to 375 for 20 to 30 minutes.
