Strawberry Summer Cake
6 T unsalted butter, at room temp.
1 1/2 C flour
1 1/2 t baking powder
1/2 t salt
>1 C sugar, plus 1 T
1 large egg
1/2 C milk
1 t vanilla
1 lb strawberries, hulled and halved
Preheat oven to 350. Butter a 10'' pan, springform pan or 9'' deep dish pie pan.
Whisk flour, baking powder & salt in a small bowl. In a larger bowl, beat butter & 1 C sugar until pale & fluffy with electric mixer, ~3 minutes. Mix in egg, milk & vanilla until just combined. Add dry mix gradually until just smooth.
Pour into prepared pie plate. Arrange strawberries cut side down, on top of batter, as close as possible (some overlapping may be necessary). Sprinkle 1 T sugar over berries.
Bake cake for 10 minutes, then reduce heat to 325. Bake until golden about 50-60 minutes. Let cool on rack. Serve lightly with whipped cream and powdered sugar on top.
