PUFFY PANCAKES

These German devils will surprise you as they get super puffy in the oven! The recipe is simple...all of the ingredients you will probably have on hand...and you can serve them with fruit preserves, syrup, honey, cinnamon or powdered sugar!
Today, I melted down some frozen mixed berries & it was pretty good!!






Pancakes:
2 T butter
3 eggs
1/2 C milk
1/2 C flour
1/4 t salt
Preheat oven to 400. Put butter into a baking dish (8 inch casserole or oven round skillet). Heat in oven for 3-5 min.
Beat eggs. Add milk, flour & salt. Beat until smooth. Pour immediately into baking dish. Bake 25 min or until edges are puffy.
