Pumpkin Cookies with Cinnamon Icing

Ready for a mouth watering treat?! These pumpkin cookies are delicious and they don't last long! They are very simple as well.






2 C flour
1/2 C whole wheat flour
1 t baking powder
1/2 t baking soda
1/2 t salt
2 t pumpkin pie spice
1/2 C butter, softened
1 1/2 C sugar
1 C canned pumpkin puree
1 egg
1 t vanilla extract

Preheat the oven to 350. Grease a baking sheet. Combine the flours, baking powder, baking soda and salt together in a mixing bowl. Mix well.

In another bowl, beat the pumpkin pie spice, butter and sugar together with a mixer until creamy. Add the pumpkin puree, egg and vanilla and mix until well combined. Slowly add the flour mix to the pumpkin mix until just combined.

Drop by the spoonful onto the baking sheet. Flatten slightly. Place in oven and bake for 15 min. Cool on a cooking rack.

THE ICING:
1 t cinnamon
1 t vanilla extract
2 C powdered sugar
1 T melted butter

Combine all ingredients together in a bowl and mix thoroughly. Place the cookies on a wire rack over wax paper or paper towels to catch the drips. Spread over each cookie!
