Veggie Egg Casserole

This recipe has continued to be successful. It is not only delicious, but it is beautiful for photo opportunities!

1 medium zucchini, diced
1 medium onion, chopped
1 containter mushrooms, sliced
3 T butter
1 t baking powder
1/2 t salt
10 eggs, lightly beaten
1 to 2 C cottage cheese
2 C cheddar cheese or other (white cheddar works wonders)

1. In a large skillet, melt butter and add zucchini, onion, and mushroom and cook until tender. Add the flour, baking powder, and salt until blended.
2. In a large bowl, combine the eggs and cottage cheese. Stir in the vegetables and cheese.
3. Transfer to a greased baking dish. Bake, uncovered, at 350 degrees for 35-45 minutes or until thermometer reads 160 degrees.
