Chili Dog

CHILI DOGS!!!

It's a Saturday afternoon...and it's sunny...mildly warm...one of those kind of hot dog or hamburger days! You know the feeling. So, what am I craving? Yes, chili hot dogs!

1/2 lb bacon
1 large onion, chopped
2 lbs ground beef
4 chopped garlic cloves
16 oz can tomato sauce
1 C beef broth
2 T molasses
2 T paprika
1 T ground cumin
1 T chili powder
salt, to taste
hot dogs
buns
chopped red onion, for garnish
shredded cheese
relish
mustard

1. Make the chili first by frying the bacon over medium heat until crispy. Add the chopped onions and cook over high heat, stirring often, until translucent. Add the ground beef and cook until browned. Halfway through cooking the ground beef, toss in the chopped garlic.
2. Once the beef is browned, add tomato sauce, molasses and beef broth. Add spices and stir well. Bring to a simmer. (You can add cayenne if you like it a little spicy.)
3. Let the chili cook on a gentle simmer for at least 30 minutes to several hours.
4. Grill or boil your hot dogs. Top with chili and your favorite condiments!

Eric and I like ours stacked a little differently.
