Cherry, Almond and Cinnamon Granola

Holy moly! Goodness gracious! You are in for a super tasty granola treat here folks. This is a recipe from the lovely Ina Garten. I wouldn't change a thing about it! However, if you have other things you would like to add based on personal taste, go for it!

This granola I eat by the spoonful, seriously! I do not like yogurt--at all--am I the only one? I'm a stickler for consistency. Anyhow, this would be perfect for topping your yogurt (for you yogurt fans). It is also good just as a snack by the spoonful or even as a cereal! You can even add it to your favorite cereal for some extra flavor.

Need some other ideas or motivation to make this granola? Here is a list I found online for you:

Make the MOST out of granola:

  • add to muffins
  • bake it in bread
  • roll bananas in granola and freeze
  • top a salad with it
  • add it to smoothies
  • crush and roll chicken in it before baking
  • gift it (wrap it in a cute little bag and tie with ribbon

4 C old fashioned rolled oats
2 C sweetened, shredded coconut
2 C sliced almonds
1 1/2 C dried cherries, chopped
1/2 C vegetable oil
1/3 C good honey
1 1/2 t ground cinnamon

Preheat the oven to 350.

Toss the oats, coconut, almonds and cherries together in a large bowl. Pour in the oil and honey. Add the cinnamon and stir with a wooden spoon until mixture is evenly coated. Pour onto a parchment-lined baking sheet. Bake, and stir occasionally with a spatula, until the mix turns a nice, even golden brown, about 25-30 minutes.

Allow to cool, stirring occasionally. Store in an airtight container.
