Broccoli Slaw


This is a pretty decent recipe taken directly from Smitten Kitchen. If you love broccoli, then this is a perfect dish for you!

Makes 6 cups of slaw--

2 heads broccoli
1/2 C thinly sliced almonds, toasted
1/3 C dried cranberries
1/2 small red onion, finely chopped

buttermilk dressing:
1/2 C buttermilk, well shaken
1/4 C-1/3 C mayo
2 T cider vinegar
1 T sugar
3 T finely chopped shallot

1. Trim broccoli and cut into large chunks. Feed it through food processor. You can use both stems and heads, but it is up to you.
2. Toss the broccoli, almonds, cranberries and onion in a medium sized bowl. Whisk the ingredients for the dressing and pour it into your bowl (use less if you do not use the broccoli stems). Refrigerate.

Keeps good for 1 week.
Try it with cauliflower too! or a mix of cauliflower and broccoli. MMMmm!!
