Caprese Salad









I love the taste of summer! I love the taste of freshness! This is a perfect combo of both!
What you need:
2 good tomatoes
a bunch of basil
good quality, fresh mozzarella cheese
good quality olive oil

1. Rinse and slice tomato to preferred thickness.
2. Chiffonade your basil. The more the merrier!
3. Pat dry your mozzarella cheese and slice thinly.
4. Take tomato slices and top with cheese, basil strips and repeat until you have a plate full. Drizzle olive oil making sure not to overpour.

I like to refrigerate sometimes before serving so the cheese doesn't get too soft. However, I take it out a little bit before serving for it to get to room temperature!
