You cannot go wrong with a simple egg salad sandwich! I actually read that egg salad is best for women before and during a menstrual cycle.
8 eggs, hard boiled and peeled, and diced
1-2 stalks celery
1-2 T mayo, or to taste
1-2 T pickle juice
1 pickle, diced
1/4 onion or small shallot, chopped finely
1. Take your eggs and place into a bowl. Mix in the mayo and stir until well combined. Pour in pickle juice, according to flavor preference.
2. Add celery, pickle, and onion. Stir.
3. Serve immediately or refrigerate.
