Roasted Shrimp Salad with White Balsamic Dressing

*I will never go back to pan frying shrimp after learning to roast it! It tastes so much better and less oily!

Roasted Shrimp:
1-2 pounds shrimp
1/2-1 T good olive oil

1. Preheat oven to 400 degrees. Peel and devein the shrimp. Place them on a sheet pan and top with olive oil, salt and pepper. Roast for 8-10 minutes.

1/2 C extra virgin olive oil
1/2 C white balsamic vinegar
1 clove crushed garlic
1 t ground mustard
1 pinch salt
 ground black pepper, to taste
1. Whisk together olive oil, vinegar, garlic, and mustard powder. Season to taste with salt and pepper. Add fresh herbs if desired.
