MEATBALLS!


















These meatballs are absolutely fabulous! They fall apart and just melt in your mouth!! You can double or triple the recipe, if needed.

2 slices white sandwich bread (crusts discarded), torn into small cubes
1/2 C buttermilk
3/4 lb ground beef chuck
1/4 lb ground pork
1/4 C grated parmesan cheese
2 T minced fresh parsley
1 large egg yolk
1 small clove garlic, minced
3/4 t salt
pepper

1. Combine bread and buttermilk in a small bowl, mashing occasionally with fork, until smooth paste forms ~10 minutes.
2. Mix all ingredients, bread mix, and pepper to taste in a large bowl. Lightly form 3 T of mixture to for 1 1/2'' round balls (don't compact them tight). Place on a foil-lined baking sheet for easier cleanup.
3. Preheat oven to 350 degrees and cook for 15 minutes.
