Tomato Vegetable Salad

I tried this salad in Las Vegas at a restaurant called Milos located in The Cosmopolitan. Talk about light and flavorful! I just had this salad for lunch and it hit the spot right on. This dish will always take me back to that wonderful meal I had on vacation at Milos.

Cut up the following vegetables:
2 beefsteak or heirloom tomatoes
1 cucumber
1 red onion (thinly sliced)
1/2 green pepper
carrot (optional)
Mix vegetables with 1/4 C olive oil, a splash of red wine vinegar (about 1-2 T), a pinch of crushed oregano and salt to taste. Serve immediately.
