BBQ Chicken Pizza

This is a quick pizza you can make if you are craving BBQ! Just use any crust recipe and adjust timing accordingly. For this pizza, I used a gluten free, pre-made crust, from Venice Bakery.

Olive oil
1/2 lb cooked chicken, cubed
kosher salt
black pepper
1 lb pizza dough, room temperature
BBQ sauce
1/2 C shredded cheddar
1/2 C shredded fontina
1/4 small red onion, thinly sliced
Ranch dressing, for drizzle
Chopped fresh chives

Prepare crust if using a homemade recipe. Bake a little in the oven before adding toppings, if necessary. Add BBQ sauce, chicken, cheese, red onion, and leave about 1/2'' room for crust. Brush the crust with olive oil and sprinkle lightly with kosher salt. Grind fresh pepper on top of pizza. Bake about 15 minutes (mine was at 475 degrees), until cheese is melted and bubbly. Top with more BBQ sauce, ranch dressing, and fresh chives.
