Lobster tails:
1. Remove shell from the back of the lobster by cutting with scissors and loosening with fingers. Remove shell gently or leave shell on pulled apart from the meat, and leave the fan tail fully intact.
2. Rinse if needed, dry, and place into a cooking dish. Drizzle olive oil or place cut pieces of butter on top. Salt and pepper to taste.
3. Broil for about 8 minutes (or grill).
4. Serve with a garlic butter dipping sauce. Melt about 4 T butter and mix in 1-2 cloves chopped garlic plus a big squeeze of lemon.
Filet:
1. Preheat oven to 500.
2. Allow to rest on counter for 30 minutes.
3. Drizzle with olive oil or avocado oil. Salt and pepper the steaks or add favorite seasoning.
4. Heat up a griddle and sear steak for about 2 minutes per side.
5. Place in preheated oven for bout 5-6 minutes or more depending on thickness. Remove from oven and rest for 10 minutes with tented foil.
