French onion soup stuffed mushrooms....DELICIOUS!!

I forgot how good these are! We are big mushroom fans in the Peterson household. Especially stuffed mushrooms!
I found this recipe about a year ago and found it in the back of my recipe box...I can't believe I forgot about it! Eric hates french onion soup and I didn't tell him the title of the recipe...He gulped them down with no complaints. They are so delicious!


French Onion Soup Stuffed Mushrooms:
2 T butter
2 whole large onions, halved and sliced thin
1/4 C beef broth
1 T Worcestershire sauce
splash of red or white wine
1/2 C grated gruyere cheese
salt to taste
24 mushrooms to stuff
minced parsley

In a medium skillet, melt 1 T butter over medium heat. Add onions and saute 15-20 minutes, stirring occasionally, until very soft. Splash in broth, Worcestershire sauce, and wine. Cook for 5 minutes. Set aside Melt 1 T butter in a large skillet over medium heat. Throw in mushrooms and toss around until coated. Sprinkle with salt. Place mushrooms on baking sheet and fill with onion mix. Top with cheese. Bake at 10 minutes at 325 degrees. Broil for 2-3 minutes afterwards. Sprinkle minced parley on top.
