Beef Stroganoff with Mushrooms


OHHH BOY! This is a great recipe that I created from like 3 different recipes! I had trouble finding 1 recipe with everything that we love in it, so I had to work my magic and create this absolutely delicious dish! However, most of it did come from "Skinny Taste" food blog. Hope you like it!

1 lb ground beef, browned
1 tablespoon butter
1/2 cup chopped onion
2 tbsp unbleached all-purpose flour
2 cups beef broth
1 tbsp Worcestershire sauce
1 tsp tomato paste
5 oz sliced Cremini mushrooms
1/4 tsp thyme
salt and pepper to taste
2 tbsp white wine 1/4 cup reduced-fat sour cream
8 oz uncooked noodles
1 tbsp minced fresh flat-leaf parsley for garnish
grated parmesan reggiano for garnish

 
1. Brown ground beef and cook noodles according to directions.
2.  Heat butter over medium heat in a skillet and add the chopped onion. Cook for about 2-4 minutes.
3. Add flour to the skillet and stir in for about 30 seconds. Gradually add in beef broth, Worcestershire sauce, and tomato paste. Stir constantly. Add ground beef, mushrooms, thyme, and salt and pepper. Cook 4-5 minutes.
4. Add wine, bring to a boil, reduce heat and simmer for 4 minutes. Remove from heat and add sour cream. Mix thoroughly. Add noodles and mix well. Garnish with parsley and cheese. Serve hot!
