Baked Parmesan Garlic Herb Salmon in foil

Another good recipe from the blog, The Recipe Critic. I get a taste for salmon very often and this is a simple way to cook it!

1 1/2 lb salmon
3 T butter
1 T lemon juice
3 cloves garlic, minced
2 T freshly grated parmesan cheese
1/2 t Italian seasoning (I eyeball oregano, basil & parsley)
1/2 t salt
1/4 t pepper
2 T fresh parsley, chopped

1. Preheat oven to 375. Lay out a piece of foil long enough to fold up the salmon inside. In a small saucepan over medium heat, melt the butter, add lemon juice, garlic, parmesan cheese, seasonings, salt, and pepper. Stir for a couple minutes and take off the heat.
2. Place the salmon skin side down on the foil. Brush with the butter marinade from the saucepan. Sprinkle the fresh parsley on top. Fold up the edges of the foil, wrapping the salmon inside.
3. Place in the oven and bake anywhere from 20 minutes to 40 minutes (the original recipe called for 13-15 minutes and this was definitely not enough time, but check it from time to time to determine doneness). Broil the top, watching closely for 2-3 minutes.
