Breakfast burritos (sausage, egg, spinach, pepper, & cheese)

These lovely breakfast burritos make for an awesome brunch or a quick on-the-go breakfast. I've been trying to freeze foods for convenience, and I've got to say, these are a total win. This recipe came from a blog called, The Recipe Critic.



1 pound breakfast sausage
2 C fresh spinach, chopped
1/3 C diced red pepper
6-8 large eggs
1 C shredded cheese (mild cheddar or cheddar jack)
flour tortillas
salsa, if desired for on the side dipping
cooking spray

1. Preheat oven to 425. Brown sausage in a large skillet over medium heat. When it is almost cooked through, add spinach and pepper, stirring and cooking for about 4 minutes. Crack eggs into a bowl, whisk, and add to skillet. Stir occasionally until eggs are just barely cooked through. Remove from heat.
2. Microwave tortillas for 30 seconds. Divide the filling between tortillas and top with cheese. Wrap the tortillas tightly and place seam-side down on a baking sheet lined with foil. Spray tops of tortillas and bake for 10-15 minutes or until crispy. Serve with salsa on the side.

*If freezing, let them cool. Cut in half to get more on-the-go portions.
