This is a copycat recipe from a Chicago salad restaurant, Sweetgreens. I found this recipe at A Beautiful Plate!
For the dressing:
2 T fresh lime juice
1/4 C freshly packed cilantro
1 small strip of jalapeno pepper, no seeds and finely chopped
1/4 C grapeseed oil (or avocado oil)
1/4 t ground cumin
1/2 t kosher salt, or less
freshly ground pepper
1. Blend all ingredients above in a food processor or blender and set aside in a small bowl.
For the salad:
optional grilled chicken
grape tomatoes, halved
diced red onion
handful of corn tortilla chips, crushed lightly
avocado slices
mixed spring greens
green leaf lettuce
2. Assemble your salad with lettuce and chosen ingredients above. I love the taste of it all!!
