Roasted Beets

This side dish or salad is an awesome flavor and is super filling! For fall, it'd look so pretty with golden beets in the mix.

4 beets, rinsed and trimmed
1/4 C minced shallot
2 T freshly minced parsley
2 T olive oil
1 T balsamic vinegar
1 T red wine vinegar
salt & pepper, to taste
feta cheese, to taste

1. Preheat oven to 400 degrees. Wrap each beet individually in foil and set on a baking sheet.
2. Prepare the dressing by whisking together the shallot, parsley, oil, and vinegar. Season with salt and pepper.
3. Bake beets about 45 minutes to 1 hour, or until a fork pierces through each one easily. Remove the beets from the foil to allow for cooling. Peel and slice into 1/4" slices.
4. Assemble the beets around on a dish and pour dressing on top. Sprinkle feta cheese on top before serving.
