This will forever remind me of being trapped inside during Chicago's polar vortex! It was a recorded -45 degree day that day so we passed the time baking and loving this recipe!

2 C flour
1/2 C sugar
3 t baking powder
1/2 t salt
1 large egg, room temp
1 C milk
1/4 C butter, melted
1/4 C honey
1. Preheat oven to 400. In a large bowl, combine flour, sugar, baking powder, and salt.
2. In a small bowl, combine egg, milk, butter, and honey. Stir into dry ingredients until just moistened.
3. Fill greased or paper-lined muffin cups 3/4 full. Bake about 15 to 18 minutes. Cool 5 minutes before removing from baking tray. Serve warm.
*These can be frozen by allowing muffins to cool completely. To use, thaw at room temperature or microwave until heated through about 20 to 30 seconds.
